What you need:
♣️1 pounds of chicken thighs (3-4 thighs)
♣️½ teaspoon salt
♣️¼ teaspoon ground black pepper
♣️1/2 cup potato starch
♣️ 4 cups cooking oil (corn or vegetable oil)
For honey butter sauce:
♣️4 tablespoons unsalted butter
♣️6 garlic cloves, minced
♣️2 tbsp white or brown sugar
♣️2 tbsp soy sauce
♣️5 tbsp honey
COOKING INSTRUCTIONS:
♣️Season the chicken by liberally seasoning with salt/ground black pepper.
♣️Coat with Potato Starch dredge ensuring a light, even coat. The starch is for that desirable crisp upon frying. Tap off any excess to avoid clumps
♣️Heat the cooking oil in a large, deep pan over medium-high heat and fry chicken.
♣️ PRO TIP: Test the oil’s readiness with a small pinch of potato starch; it should sizzle upon contact.
♣️Gently lay the chicken thighs in the hot oil, skin-side down, and fry until golden brown, about 5-6 minutes per side.
♣️Once fried to perfection, transfer the chicken to a plate lined with paper towels to remove excess oil keeping the chicken crispy.
Making the Honey Butter Sauce 🍯
♣️In a separate pan, melt the unsalted butter over medium heat. Add minced garlic, sautéing until aromatic. Stir in the sugar, soy sauce, and honey, cooking the mixture until it simmers and begins to thicken.
♣️Now return the crispy chicken to the pan with the honey butter sauce. Increase the heat slightly, and toss the chicken in the sauce for about a min on each side. The goal is for each piece to be thoroughly coated in this flavorful sauce while staying crisp.
♣️Serve the honey butter chicken immediately after coating it with the sauce to ensure it retains its crispiness. Garnishing with sesame seeds /sliced green onions adds a burst of fresh flavor.
